INGREDIENTS (Serves 2)

  • 2 Chamomile tea bags

  • 2 Cups (16fl oz) freshly boiled water

  • 2 Teaspoons crushed cinnamon

  • 2- Teaspoons honey

  • Warm milk (dairy or plant based) - to taste

INSTRUCTIONS

1. Boil the water in a kettle or saucepan until it reaches a rolling boil.

2. For best results, use a teapot and warm it first. Pour boiling water into the teapot and swirl for a minute or two before discarding the water.

3. Roughly crush the cinnamon using a pestle or mortar, or by placing a cinnamon stick in a ziplock bag and gently tapping with a rolling pin.

4. Place the cinnamon and tea bags (or loose leaves) into the warmed teapot. Pour boiling water over the leaves, ensuring they are fully submerged. Allow the tea to steep for 5-10 minutes.

5. While the tea is steeping, warm your milk. Optional: Use a milk frother, steamer or whisk the milk to create latte-like bubbles in the warm milk.

6. Strain the brewed chamomile cinnamon infusion equally between two cups or mugs using a tea strainer to separate out the loose herb. Stir in 1-2 teaspoons of honey into each cup.

7. Pour the warm milk over the tea, dividing it equally between the mugs. Give the milk teas a gentle stir and serve hot. Add an optional sprinkle of cinnamon on top.
