Making Dairy Free Earl Grey Fudge at Home
INGREDIENTS (Serves 12)
3 Heaped Tablespoons of Earl Grey Tea
1.5 Cups (250g) Extra Dark Chocolate
1 Cup (250g) of Honey, Maple Syrup or Agave
1 Cup (240g) of Almond Butter
1/2 Cup (70g) of Roughly Chopped Almonds
1/4 Cup (2fl oz) of Milk of Choice
2 Tablespoons of Coconut Oil
2-3 Tablespoons of Arrowroot Powder
1 Teaspoon of Vanilla Extract
Pinch of Salt
METHOD
Firstly, line a brownie tin with baking paper.
Using a medium saucepan, gently heat up the almond milk, and add the earl grey loose leaf tea. Slowly warm the milk for around 5-7 minutes, stirring continuously, ensuring that the leaves do not overheat and burn. Once steeped, strain the leaves.
Pour the milk back into the saucepan. Add the oil, sweetener, dark chocolate, almond butter and vanilla extract. Continue to stir all of the ingredients until completely melted. It may go a little lumpy at first but keep stirring, it will smooth out after about 5 minutes.
Next, add the chopped almonds, arrowroot powder and a pinch of salt. Ensure that everything is mixed completely and pour the fudge mixture into your lined tin and place in the fridge to set for at least 4 hours.
Store in the fridge to keep fresh. Whilst it does hold its shape well when out of the fridge in moderate temperatures, it will still become soft if left out for too long.
