Making Chocolate Matcha Mug Cakes at Home

INGREDIENTS

  • 1 Large Egg

  • 1 Teaspoon Vanilla Extract

  • 1 Teaspoon Coconut Oil (Melted)

  • 1 Tablespoon Cashew Butter (Natural, no added sugar)

  • 2 Tablespoons Maple Syrup

  • 1 Tablespoon Cocoa Powder

  • 3 Tablespoons Ground Almonds

  • 1 Teaspoon Matcha Powder

  • 1/4 Teaspoon Baking Powder

  • Pinch of Salt

  • 1 Tablespoon 85% Extra Dark Chocolate Chips

METHOD

  • In a separate mug or small bowl, combine all the dry ingredients together. Cocoa powder, ground almonds, matcha powder, baking powder, salt.

  • In the mug, mix together all the wet ingredients using the fork. Egg, vanilla extract, coconut oil, cashew butter, maple syrup.

  • Mix the dry and wet ingredients together with the fork and combine well so that there are no lumps.

  • Add the chocolate chips to the mix.

  • Place in the microwave on high for around 45-60 seconds. The cake will come out really hot so perhaps wait a few minutes before tucking in. If this looks too much for one person, split between 2 smaller cups and place in the microwave for around 30-45 seconds each.

  • Add a spoonful of coconut cream with a dusting of cocoa powder for extra indulgence.
