Making Chocolate Matcha Mug Cakes at Home
INGREDIENTS
1 Large Egg
1 Teaspoon Vanilla Extract
1 Teaspoon Coconut Oil (Melted)
1 Tablespoon Cashew Butter (Natural, no added sugar)
2 Tablespoons Maple Syrup
1 Tablespoon Cocoa Powder
3 Tablespoons Ground Almonds
1 Teaspoon Matcha Powder
1/4 Teaspoon Baking Powder
Pinch of Salt
1 Tablespoon 85% Extra Dark Chocolate Chips
METHOD
In a separate mug or small bowl, combine all the dry ingredients together. Cocoa powder, ground almonds, matcha powder, baking powder, salt.
In the mug, mix together all the wet ingredients using the fork. Egg, vanilla extract, coconut oil, cashew butter, maple syrup.
Mix the dry and wet ingredients together with the fork and combine well so that there are no lumps.
Add the chocolate chips to the mix.
Place in the microwave on high for around 45-60 seconds. The cake will come out really hot so perhaps wait a few minutes before tucking in. If this looks too much for one person, split between 2 smaller cups and place in the microwave for around 30-45 seconds each.
Add a spoonful of coconut cream with a dusting of cocoa powder for extra indulgence.
