Making Green Tea Dressing for Salsa at Home
INGREDIENTS
For the Tea Dressing
2 Teaspoons of Green Tea
2 Tablespoons of Olive Oil
1 Tablespoon of Honey
1 Tablespoon of Fresh Lime Juice
1 Garlic Clove
1/4 Cup of Fresh Coriander
1/2 Teaspoon of Fresh Chili - Optional
Salt and Pepper to Taste
For the Salsa
1 Cup of Cherry Tomatoes
1 Large Red Onion
A Handful of Jalapeño Peppers
Fresh Lime Wedges
1/2 Cup of Fresh Coriander
METHOD
Brew the green tea leaves in 1/2 cup of freshly boiled but slightly cooled water (around 80*C/175*F). Allow to steep for 3-5 minutes before straining out the leaves. However for a stronger tasting dressing, leave the tea leaves in. Set aside to cool.
Place the cooled tea and all of the ingredients into a blender and combine.
Add salt and pepper to taste.
To make the salsa, roughly chop the cherry tomatoes, red onion and jalapeño peppers, and mix together.
Pour over the tea dressing and mix well.
Serve with fresh coriander and lime wedges
