Making Green Tea Dressing for Salsa at Home

INGREDIENTS

For the Tea Dressing

  • 2 Teaspoons of Green Tea

  • 2 Tablespoons of Olive Oil

  • 1 Tablespoon of Honey

  • 1 Tablespoon of Fresh Lime Juice

  • 1 Garlic Clove

  • 1/4 Cup of Fresh Coriander

  • 1/2 Teaspoon of Fresh Chili - Optional

  • Salt and Pepper to Taste

For the Salsa

  • 1 Cup of Cherry Tomatoes

  • 1 Large Red Onion

  • A Handful of Jalapeño Peppers

  • Fresh Lime Wedges

  • 1/2 Cup of Fresh Coriander

METHOD

  • Brew the green tea leaves in 1/2 cup of freshly boiled but slightly cooled water (around 80*C/175*F). Allow to steep for 3-5 minutes before straining out the leaves. However for a stronger tasting dressing, leave the tea leaves in. Set aside to cool.

  • Place the cooled tea and all of the ingredients into a blender and combine.

  • Add salt and pepper to taste.

  • To make the salsa, roughly chop the cherry tomatoes, red onion and jalapeño peppers, and mix together.

  • Pour over the tea dressing and mix well.

  • Serve with fresh coriander and lime wedges
