Vegan Matcha Green Tea Flatbreads

How to Make Matcha Green Tea Flatbreads From Scratch

Here is my recipe for dairy free, vegan matcha flatbreads. Enjoy these in so many ways; add butter, crushed garlic and cilantro for dunkable garlic naans. Add your favourite toppings and grill for mini flatbread pizzas. Or add grilled protein and salad for yummy lunch time wraps.

INGREDIENTS (Serves 8)

  • 1 Tablespoon of Matcha Green Tea Powder

  • 3 Cups (375g) of Plain/All Purpose Flour

  • 1 Packet of Active Dry Yeast

  • 1/2 Cup (4 fl oz) of Warm Water

  • 1/2 Cup (4fl oz) of Almond Milk

  • 1 Tablespoon of Olive Oil

  • 1 Tablespoon of Sugar

  • 1 Teaspoon of Apple Cider Vinegar or Lemon Juice

  • Pinch of Salt

METHOD

  • Firstly, combine the warm water, olive oil, apple cider vinegar and sugar and add the yeast. Set aside for 5 minutes to activate. The yeast will become all bubbly when ready.

  • Next add the almond milk to the mixture.

  • In a large bowl, sieve in the flour, matcha and pinch of salt, create a well in the middle and slowly pour in the yeast mixture and combine using a fork.

  • Switch to your hands to kneed the dough. It will take about five minutes to kneed into a smooth ball of dough. Alternatively, use the dough hook on a stand mixer and combine.

  • Flour the bowl, add the ball of dough and cover with a warm damp tea towel or muslin cloth to prove.

  • After about an hour, the dough will have roughly doubled in size. Knock the air out of the dough and cut into 8 equal pieces.

  • Roll out thinly as they will puff up when cooked.

  • Preheat a frying pan on a medium to high heat and spray a little oil or butter, cook each flatbread for 1-2 minutes until they start to bubble up and flip and cook for a further 1-2 minutes on the other side.

  • Add your favorite toppings and enjoy :)
