Is This Mug Cake Vegan Friendly?

I’ve called this a vegan-ish mug cake recipe as there is an on going debate as to whether Oreo’s are actually vegan or not. They don’t contain dairy, however, traces of dairy maybe present. Feel free to omit the Oreo’s for a strictly vegan mug cake.

For the ice cream, I’m using Oatley chocolate ice cream for a fudgy brownie style. I’ve tried this recipe with almond ice cream, coconut ice cream, cashew ice cream and soya too. Personally, oat milk ice cream works the best. I make this with regular ice cream for others and that get’s a thumbs up too.

Why are Mug Cakes so Popular Right Now?

Mug cakes are hugely popular right now because they are soooo easy to whip up in a single serving without all the cake making equipment or mess. Plus who doesn’t like a little bit convenience when those sugar cravings hit hard!

Should I use Plain Flour or Self Raising Flour in This Ice Cream and Oreo Mug Cake Recipe?

This ice cream and Oreo mug cake recipe calls for 1/3 cup of self raising flour. To substitute the flours, you can either mix a big batch of plain flour, baking powder and salt. Alternatively, you can use 1/3 cup of plain flour with just over 1/3 teaspoon of baking powder and a pinch of salt.

And how can I substitute all-purpose or plain flour for self-raising flour? I use self raising flour in many recipes as it contains an exact amount of plain flour, baking powder and salt. It’s far more convenient to use self raising flour in some recipes that measuring out the separate ingredients. In self raising flour, for every 1 cup of plain flour is 1.5 teaspoons of baking powder and 1/4 teaspoon of salt.

Which Type of Mug is Used for a Mug Cake?

I would always recommend using a ceramic microwave safe mug for this type of recipe for a mug cake. Never use a metal mug or cup or even a mug or cup with any metallic writing or images. I once made the mistake of putting a mug with a metallic handle in the microwave whoops! Also, the mug or cup used should be bigger than the cake mix to allow for the cake to expand when cooking in the microwave.

Why is my Ice Cream and Oreo Mug Cake Chewy?

Sometimes mug cakes can have that not-so-nice chewy consistency and it’s really not a pleasant experience. The rubbery texture usually comes from over cooking. I would recommend starting off at one minute in the microwave for one mug cake and then 30 second intervals after that. I’ve never had to cook a mug cake for longer than 1 and a half minutes. Any longer and you will run the risk of getting a yucky chewy mug cake. And the beauty of mug cakes is that they are super quick and easy so it’s best to avoid having to start over.

How to Make my Ice Cream and Oreo Mug Cake from Scratch

Mug cakes are quite possibly the easiest cake creations ever. Making a mug cake from scratch can be prepped and cooked in as little as a few minutes. This cake consists of just 3 ingredients: ice cream, Oreos and self raising flour. All you will need to do is add the ingredients into a mug, mix it up and microwave! It’s that easy. Oh and pop the kettle on, cake is always best enjoyed with a cuppa :)

INGREDIENTS (Serves 1)

  • 1 cup of ice cream - melted

  • 1/3 cup of self raising flour

  • 3 crushed Oreo cookies

METHOD

  1. Firstly, mix together the flour and melted ice cream and ensure it is completely combined.

  2. Add the crushed Oreo’s and stir a little more to cover the Oreo’s.

  3. Pop the mixture in the microwave for 1 minute 30 seconds. Depending on the strength of your microwave, it will need between 1-2 minutes.

  4. Allow to cool slightly and add a scoop of ice cream and a sprinkle of more crushed Oreo’s on top. This is purely optional but highly recommended! Enjoy :)
