How to Make Masala Chai Spiced Freezer Fudge From Scratch

Here how to make this masala chai spiced freezer fudge from scratch: Firstly, infuse all those lovely flavors and aromas into the milk and melted oil. Once steeped, remove the leaves or bags and add all of the other ingredients. Once everything has melted and is well combined, pour into a lined tine and place in the freezer to set. Serve straight from the freezer so that it has that dense fudge-like texture.

INGREDIENTS (Serves 24)

  • 4 Heaped Teaspoons of Masala Chai (o r 4 Tea Bags)

  • 1 Cup (215g) of Sweetener (or Honey/Agave/Maple Syrup)

  • 1 Cup (228g) of Coconut Cream

  • 1 Cup (250g) of Tahini

  • 1/4 Cup (2 fl oz) of Milk (Almond, Soy, Oat etc…)

  • 2 Tablespoons of Coconut Oil

  • 1/2 Cup (60g) of Arrowroot Powder

  • 1 Teaspoon of Vanilla Extract

  • Pinch of Salt

METHOD

  • Firstly, line a brownie tin with parchment/baking paper.

  • Using a medium saucepan, heat the milk and coconut oil. Add the masala chai, take off the heat and leave to infuse for 5-10 minutes.

  • After this time, strain the leaves and pour the infused milk mix back into the saucepan.

  • Add the sweetener of choice, coconut cream, tahini (or other nut butter), vanilla extract and pinch of salt. Keep stirring until smooth and well combined.

  • Lastly, add the arrowroot powder and combine using a whisk to remove any lumps.

  • Pour the melted fudge into the lined brownie tin and place in the freezer for around 4 hours to set.
