What Does Lady Grey Tea Taste Like?
Lady grey tea has similar characteristics to that of earl grey tea, but with more delicate notes. Earl grey tea is stronger in taste and aroma than Earl grey tea.
Earl grey tea is a blend of black tea, usually a mix of Indian and Chinese teas and flavoured with bergamot oil. Whereas, lady grey tea is usually made up of Ceylon tea and flavoured with hints of citrus.
Twinings trademarked the name ‘lady grey’. Other brands of tea can offer a similar alternative of light black tea with citrus or lemon, however cannot use the name. ‘Earl grey’ is not trademarked and many tea companies offer their own versions of the blend.
Is Lady Grey Tea Good for You?
Tea has been enjoyed for thousands of years and food good reason too. Tea is full of health boosting benefits by way of antioxidants. Black tea especially, has been reported to improve gut microbiome, that’s balancing out the good and bad bacteria. When black tea is processed, the catechins (the antioxidants) are metabolized into flavonols. Flavonols are a type of polyphenol. Black tea flavanols are known as thearubigins and theaflavins. These polyphenols aren’t as easily absorbed in the gut, compared to those in green tea, so they hang around for longer. This can positively impact the types of bacteria found in the gut.
What are Meyer Lemons?
I’ve previously seen meyer lemons while out shopping for groceries and never thought twice about picking them up as I didn’t have a clue what to do with one. Today, I realized how I’ve been missing out for so long, big time!
A meyer lemon is a cross between a lemon and a mandarin and I’ve just discovered it is the perfect flavor to compliment many types of tea, plus it’s totally amazing in a lemon drizzle cake.
A meyer lemon is slightly smaller in size to a regular lemon with a less textured and more orange appearance. They also taste less acidic and a little more sweet than a regular lemon too.
How to Make my Tea Inspired Lemon Drizzle Cake From Scratch
INGREDIENTS (Serves 12)
1 Cup (225g) of Butter or Butter Alternative
1 Cup (200g) of Caster Sugar
2 Cups (250g) of Self Raising Flour
4 Eggs
1 Meyer Lemon Zest
2 Tablespoons of Meyer Lemon Juice
For the drizzle
2 Lady Grey Tea Bags
1/4 Cup (2fl oz) of Freshly Boiled Water
Juice of 1 Meyer Lemon
1/2 Cup (60g) of Granulated Sugar
METHOD
Preheat the oven to 350*F/180*C/Gas Mark 4 and line a loaf tin with parchment paper.
To make the cake, firstly cream together the butter/palm shortening and caster sugar until light and fluffy.
Next, add the eggs one at a time and continue to combine before adding the lemon zest and juice.
Slowly sieve and fold in the flour.
Pour into your lined loaf tin and bake in the oven for 45-55 minutes. The cake will be ready when an inserted skewer comes out clean.
While the cake is still warm, make the drizzle. Firstly, brew the lady grey tea bags in 1/4 cup of freshly boiled water for 5 minutes. This will make a strongly concentrated tea. Mix together the juice from 1 lemon, the brewed tea and granulated sugar.
Poke holes all over your cake and pour the drizzle over the cake while the cake is still in the tin.
Once the cake has cooled completely, remove from the tin, slice and enjoy.
Also you can ice twice for extra naughtiness. Combine 1 cup (120g) of sifted icing sugar and cold water, adding just a few drops of water at a time. Use a spatula to keep the icing smooth and then top your cake.
Store in an airtight container and consume with 3-4 days.
Note: You can sub the meyer lemons for regular lemons and the lady grey tea for earl grey tea.
