Lemons and limes are both a sour citrus fruit, lemons tend to be slightly sweeter than limes and limes slightly more bitter than lemons. Lemons are yellow and larger than limes, limes are green and smaller than lemons. I had the inspiration for making this lime drizzle cake after recently baking a family favourite, this lady grey & meyer lemon drizzle cake. This lime cake is just as delicious as our popular lemon drizzle cake but with more pretty vibrant colour. I love adding matcha to this lime drizzle cake, not only does it provide a wonderful earthy flavour but it also provides a beautiful green colour boost which is perfect for a lime flavour cake.

Why is it Called a Marble Cake?

A marble cake is a popular cake made by a marbling effect with two or more different coloured cake batters. The original marble cake was first made in Germany around 100 years ago and is traditionally made with German spices, almonds and molasses. Nowadays, the marble cake has so many variations around the world including chocolate swirled with vanilla, pretty rainbow marble cakes and this delish matcha marble and lime drizzle cake recipe.

What is the Best way to Marble a Cake?

Making the marble effect in this cake is super easy to do. You will need to save some of the batter, I would recommend about 4 tablespoons of batter and add a splash of milk and your matcha powder. Using a whisk, mix in your matcha powder so that no lumps remain. To make the swirly pattern, firstly add your plain cake batter in to your cake tin. Next, randomly add dollops of your matcha cake batter over the top. Using a fork or tooth pick swirl the two colours together and bake for the desired time. (Be careful not to stir too much) When your cake is ready and you slice it, you will see the pretty green pattern inside.

How to Make my Matcha Marble and Lime Drizzle Cake Recipe from Scratch

Making this matcha marble lime drizzle cake from scratch is quite simple to do and in just a few steps. Feel free to add extra icing and candied limes to finish your cake! Enjoy a HUGE wedge with a hot cuppa :)

INGREDIENTS (Serves 12)

  • 1 Cup (225g) of Butter or Palm Shortening/Butter Alternative

  • 1 Cup (200g) of Caster Sugar

  • 2 Cups (250g) of Plain/All Purpose Flour

  • 2 Teaspoons of Baking Powder

  • Pinch of Salt

  • 4 Eggs

  • Juice and Zest of 2 Limes

  • 3 Tablespoons of Matcha Green Tea

  • 1/4 Cup (2fl oz) of Almond Milk (or Milk)

For the drizzle

  • 1/2 Cup (60g) of Granulated Sugar

  • Juice of 2 Limes

METHOD

  • Preheat the oven to 350*F/180*C/Gas Mark 4 and line a loaf tin with parchment paper.

  • To make the cake, firstly cream together the butter/palm shortening and caster sugar until light and fluffy.

  • Next, add the eggs one at a time and continue to combine before adding the lime juice and zest.

  • Slowly sieve and fold in the flour, baking powder and pinch of salt.

  • Remove roughly 4 tablespoons of the cake batter and place in a smaller bowl. Add the milk and matcha powder and combine completely with a whisk.

  • To make the marbled effect, randomly dot in the matcha cake batter into the plain cake batter. Stir gently by folding in for just a few moments. Do not fold in too many times otherwise you will not get the lovely swirly effect.

  • Pour into your lined loaf tin and bake in the oven for 50 minutes. The cake will be ready when an inserted skewer comes out clean.

  • While the cake is still warm, make the drizzle by mixing together the icing sugar and lime juice.

  • Poke holes all over your cake and pour the drizzle over the cake while the cake is still in the tin.

  • Remove from the tin only once the cake has completely cooled.

  • Once the cake has cooled, slice and enjoy with a hot cuppa :)
