Pumpkin spice syrup is a type of simple syrup made famous by Starbucks. Many people love to enjoy pumpkin spice lattes (aka PSL’s) at the start of autumn all the way through to the winter months. This kind of syrup is commonly used to flavour lattes, iced teas and other fabulous coffee shop drinks. Pumpkin spice syrup is also known as pumpkin spice sauce or pumpkin pie sauce.
What Pumpkin Syrup Does Starbucks Use?
I’m not 100% sure what pumpkin syrup Starbucks uses or the exact ingredients, however, I know that they use a mixture of pumpkin spice, condensed milk, pumpkin puree, preservatives and even e-numbers. My recipe is a little different, but it’s still lush plus I use simple ingredients and I think it’s the best for using in tea and in coffee.
I leave out the condensed milk for one reason and that’s to make it inclusive for everyone. These days not everyone has dairy in their diet. Afterall, you can easily add dairy or a plant based milk of choice at the time of making your tea/coffee. And then top with whatever type of cream that your heart desires.
Uses for Pumpkin Puree Syrup
There are ample uses for this delicious pumpkiny spiced syrup. Just use it in place of sugar in any recipe for a hit of autumn flavour and flare. Here are some great ways to use it:
Make a tea latte: Add a drizzle of syrup to a rich strong cup of black tea and top with frothy milk for a delightful tea latte. Alternatively, use in a coffee latte, an iced coffee latte or simply use in an iced black coffee.
Make iced tea: For something more refreshing, add a drizzle to your favourite iced tea recipe.
Make an iced tea latte: Add to an iced tea latte by firstly strongly brewing your tea, add your syrup, pour over ice before topping up with cold milk. Try using your syrup on this iced Biscoff tea latte.
Make sparkling iced tea: For a bubbly refresher, add your homemade pumpkin syrup to this carbonated tea recipe. Try using strong black tea such as English breakfast or masala chai when making your own sparkling tea.

Tips for Making Pumpkin Chai Syrup
Brown sugar: I think that using brown sugar in this recipe gives a more warming caramel like flavor. Alternatives are white sugar or zero calorie sugar substitutes. If you use sweeteners ensure that the sugar substitute you use melts and dissolves, otherwise you will end up with a lumpy mess. You can also use honey in honey simple syrup.
Pumpkin puree: Use 100% pumpkin puree rather than pumpkin pie filling. You can also make your own homemade pumpkin puree.
Store it: Keep your cooked and cooled pumpkin sauce in a glass pouring jar or mason jar and keep it in the fridge for up to 4 weeks.
Masala chai: I love using chai tea to flavour this pumpkiny sauce. You can use either 4 teaspoons of loose leaf tea or 4 tea bags per 3/4 cup of freshly boiled water. You will want to make your tea nice and strong to add a wonderful taste and aroma to your syrup recipe.
How to Make my Pumpkin Syrup for Tea and Coffee
INGREDIENTS
1 Cup of Brown Sugar
3/4 Cup of Water
4 Teaspoons of Masala Chai Tea (or 4 Tea Bags)
1/4 Cup Pumpkin Puree
1 Teaspoon of Vanilla Extract
Pinch of Salt
METHOD
Firstly, brew the tea in freshly boiled water. Cover and allow to steep for around 10 minutes before straining out the leaves.
Add your tea and brown sugar to a small saucepan.
Bring to a medium heat and gently simmer the tea mixture until the sugar has fully dissolved.
Next, add the pumpkin puree, vanilla extract and salt. Mix together for a few minutes further until everything is well combined.
Turn off the heat and set aside to cool completely.
Pass the pumpkin puree through a fine mesh strainer or sieve to rid of any lumps.
Store in a mason jar or syrup bottle, and in the fridge for up to 4 weeks. Use to flavor all your favorite tea recipes. Enjoy :)
